I first fell in love with charcuterie many years ago while vacationing at my grandparents home in Italy! For us it was not a chic and hip thing to do… It was simply practical and a way of life!
It was the fastest way to feed a lot of people and it was also economical! My grandparents and Aunts and Uncles would gather their favorite salamis, cheeses, breads, nuts and fruit and put everything on a big board. We would sit around as a family laughing and joking and constantly reaching for different things to nibble off of the board!
As I continue my trips back to my hometown I have watched the charcuterie experience go from the home to the restaurants, it’s been wonderful going to the different eateries throughout Italy and sampling the local meats,cheeses and bruschetta that are proudly displayed on charcuterie boards!
I’d like to share with you my favorite bruschetta recipe! It is quite simple and easy to make and is a perfect addition to any charcuterie board!
Bruschetta al Pomodoro
- One large or two medium salad tomatoes or about 16 cherry tomatoes
- about 16 fresh basil leaves
- several slices of coarse country bread about a half of an inch thick
- Three cloves of garlic peeled and left hole
- salt
- 2-4 tablespoons extra virgin olive oil
Preheat broiler to high, (if you prefer you can also grill the bread). Place bread slices on a broiler pan. Char bread on each side under hot broiler, keep an eye on it! Rub toasts with one of the cracked garlic and drizzle with oil. Chop seeded tomatoes and place in a small bowl. Mince remaining garlic and put into the bowl with tomatoes. Pile basil leaves on top of one another and roll into a log. Thinly slice basil into green confetti and loosely combine with tomatoes and garlic. Add a drizzle of oil and a little coarse salt to the bowl and gently toss tomatoes and basil to coat.
Take your toasted bread and put a scoop of your well tossed tomato, garlic and basil mixture on top!
Pour yourself a nice glass of chilled Pinot Grigio sit down with someone that you love and enjoy your self!
