Geppetta’s  Tomato Soup


A simple, soulful tomato soup inspired by Italian kitchens where nothing is rushed and everything is shared.


Ingredients

2 cans fire-roasted diced tomatoes (14.5 oz each)

½ can tomato paste (about 3 oz)

½ white onion, finely diced

3–4 cups chicken broth, depending on desired thickness

A few generous handfuls of fresh basil leaves

1 tablespoon olive oil

1 tablespoon butter

1–2 teaspoons sugar, to taste

Salt, to taste


Optional finishing touches

Heavy whipping cream or half-and-half

A small pat of butter for a silky, glossy finish

Crispy bacon bits for topping


Directions

Warm the olive oil and butter in a large pot over medium heat.

Add the diced onion and cook until soft and nearly translucent.


Stir in the tomato paste and let it cook for one to two minutes to deepen the flavor.

If needed, add a small splash of water to loosen the paste.


Add the fire-roasted tomatoes and stir well.

Pour in three cups of chicken broth, add the basil and sugar, and bring to a gentle simmer.


Simmer uncovered for about fifteen minutes.

Taste and adjust salt or sweetness as needed.


Turn off the heat and blend until smooth using a handheld immersion blender.

If the soup is too thick, add more broth until it reaches the consistency you prefer.


Finish with cream or half-and-half if using.

For a velvety, restaurant-style finish, stir in a small pat of butter just before serving.


Serve warm with crunchy bread, shredded cheese, and your favorite soup night toppings.
